Green egg masala

If you are a regular to my blog, you would know by now that eggs are one of my favourite ingredient. I make so many different things with eggs that I just love how it adapts to different cuisines and different ingredients.

Egg curries are so easy to make and they can be made any time. I have tried this recipe for the first time and we loved it. I love the green masala so much that might use the same ingredients to use it with something else like chicken or fish.

They don’t have much of a gravy so the consistency is good to enjoy them with roti or naan. For gluten free people like me, I actually tried them with Gluten free naan.

What you need (For 2-3 people)

  1. 6 organic eggs
  2. 2 cups of finely chopped spinach
  3. 1 cup of chopped coriander leaves and stalks
  4. 4 green chilles
  5. 2 onions – 1 thickly sliced and the other finely chopped
  6. 1 tsp cumin powder
  7. 1 tbsp coriander powder
  8.  2-3 tbsps of ghee
  9. 1 lemon
  10. Salt to taste
  11. 1tbsp of garam masala
  12. 1 pinch of turmeric

Procedure:

Boil the eggs in a saucepan in water. De-shell them and then keep them aside on a plate. Add the pinch of turmeric to coat them before frying them in ghee.

Boil the spinach, thickly sliced onions, coriander leaves and green chillies. I used a pressure cooker but you can boil them in little water to turn them soft. Once they soft, blend them in a blender to make a smooth green puree.

In a frying pan, heat a 1 tbsp of ghee and when hot add the turmeric coated eggs. To prevent the eggs from bursting, cut a slit on the white part of the egg. Once they are slightly brown on all sides, take them out of the pan and then drain the excess the oil on a kitchen towel.

In the same pan, heat the rest of the ghee and then add the finely chopped onions to it. Fry them till they are golden brown. Add the spices (cumin + coriander+ garam masala) to the onions and fry them for a couple of minutes on low flame.

Once all the spices are fried, add the green paste and cook it on medium flame for around 10 minutes. Add the eggs after that and cook it further for 5 minutes. Once the gravy has reduced to a consistency that you would like, switch off the gas and sprinkle lemon juice all over it. Add one tsp of ghee on the top if you want.

Your green egg masala is ready to enjoy!
