Masala meatballs

Well, it’s been a long time since I wrote a post and this is a perfect one to try in this cold weather. I tried making a dry and wet spice mix for the first time with this dish and was reasonably satisfied with it. I will keep improving with more practice.

So for the time being here you go with my masala meatballs recipe:

What you will need (for 2 people)

1. 300 gms lamb mince rolled into golf sized balls. You should get around 12 balls from this meat.

2. 1 red onion (medium sized) sliced thinly

3. 1 large tomato diced

4. Dry spice mix ( dry roast 1 tsp of desiccated coconut+ 1 tsp of poppy seeds + 10-12 peanuts+ 1 big black cardamom+ 2-3 dry red chilies + 3 cloves+ 4-5 black pepper+1/2 tsp of cumin +1/2 tsp of coriander seeds +1 inch of cinnamon, and when they are turning brown turn the heat off and let them cool. Once cooled, grind them into a powder in a blender)

4. Wet spice mix (1 golf size ginger + 8-10 garlic cloves + the diced tomato)

5. Any White oil to fry

6 1 tbsp of full fat cream

7. 1 tsp Turmeric powder

8. 1/2 tsp of Kashmiri chilly powder

9. Salt and a pinch of sugar.

Procedure

1. Heat some oil in a frying pan and gently fry the meatballs. Before frying make sure you season the meatballs with salt and black pepper.

2. Take the meatballs out on a kitchen towel to drain excess oil.

3. In another deep pan, heat oil and then fry the onions till they are light brown. Add a pinch of sugar to speed up the browning process.

4. Once the onions are fried add turmeric and the Kashmiri chilli to it and then add the wet spice mix and fry it on low heat. Once the oil separates the wet mix is cooked, add the dry spice mix. If the spice starts sticking, add some hot water to save it from getting burnt. Once the spices are all cooked and the oil separates, add the meatballs along with the juices from the fry pan in which the meatballs were fried.

5. Add around 1 cup of hot water to the pan and let the meatballs simmer in the gravy for around 10 minutes. Season the gravy with salt.

6. After 10 minutes of cooking the meatballs, sprinkle a tsp of ghee, tbsp of cream and some garam masala powder. Mix it well and switch off the heat.

5. Sprinkle some chopped coriander leaves and serve it with lemon wedges.

6. This can be eaten with both rice and any form of bread.
